In a large pot boil 4 ½ cups of salted water. Once water is boiling, add 3 cups of quinoa and 1 package of seasoning mix. Simmer over low-medium heat until all water is evaporated. In a separate pan sauté zucchini, tomatoes, mushrooms and onions. Place quinoa and vegetables in a serving bowl. Add crumbled feta and salt to taste. Serve with chicken. Serve and enjoy!
