Preheat oven at 400°. In a large bowl mix sugar and pancake mix. In a separate bowl, whisk egg, water, canola oil and preserves. Stir into dry ingredients until well mixed and moistened. Place paper liners into a muffin pan. Then fill each cup 2/3 full with muffin mix. Place in oven for 14-16 minutes or until a toothpick comes out clean. Let cool for 5 minutes before serving. Serve and enjoy!
